It has become clear to me that my ‘bucket chef’ approach to cooking is not really appropriate while I am only making meals for Skye and myself. Aside from the huge amount of leftovers, it is a little tricky to monitor things on my temperamental stove top whilst bathing Skye and if I wait until she is in bed I wouldn’t be eating until midnight! I have no intention of eating raisin toast or cereal for dinner every night so I have had to work on a new meal plan that is better suited to our current living arrangements. As we live in the sticks, takeaway’s aren’t an option so I still have to cook something…
In no particular order, here are a couple of my upcoming dinner options:
Poached Eggs with Smoked Salmon (Luke doesn’t eat fish so I always buy some Smoked Salmon when he is away)
Stir Through Pasta’s
Pensioners Baked Pumpkin Risotto (recipe will be shared soon)
Homemade Pizza
Fish and Chips (home cooked)
Lamb chops and cheesy vegetables (because I can only afford to buy enough chops for 1.5 people)
Slow Cooker Baked Chicken
Fortunately I also have a few meals stacked away in the freezer for when Skye Wrangling saps me of the will to cook anything. I also plan to make a few extra meals on the weekends while Luke is home so I can still enjoy some of the usual fare.

If I'm home alone with the kids and want a quick and easy dinner I do beans on toast or spaghetti on toast or egg on toast like you. We love those Fray Bentos sausages in a tin which are devine with baked beans and a poached egg on the side. I've done bacon and cheese sandwiches and toasted cheese, tomato and onion sandwiches. Otherwise it's leftovers for us which we make pies out of in the pie maker. It's the best thing ever for utilising leftovers, especially spag bog or casseroles or rice dishes! :-)
