Happy Birthday to Mum and a Cheat’s Birthday Cake!

This weekend we celebrated my gorgeous mum’s birthday. Luke had to work so Skye and I went to my brothers house for a BBQ lunch finished off with the ultimate lazy birthday cake! You can see my mum modelling her birthday scarf in the picture – she is very happy leopard print is so big this season.

Skye however, was not quite so happy to pose for the camera – she was hoping to score some more of the delicious cake we made.


This cake has fast become a “go-to” for any celebrations we have because the only step that involves any kind of equipment is the whipping of the cream.

We chose to use a jar of mixed berries for this because it was what we had on hand but it would also work beautifully with fresh or tinned peaches, kiwi fruit, strawberries, anything really!
Please forgive the slightly uneven sponge layers, my dad was in charge of slicing the cake Smile.


This is what you need to do.


Ingredients
600ml thickened cream
Half a cup of Lemon Butter (store bought)
1 x 460g double unfilled sponge cake
Fruit of your choice


Method
Whip cream until soft peaks form.
Gently fold in lemon butter.
Remove cake from packet (really this was a step).
Split each layer in half through centre to make 4 layers.
Spread each layer with cream and scatter with desired fruit.
Layer on top of each other.


How easy is that? This cake serves up to 10 people and is surprisingly light because the lemon butter really lifts the cream.
